This easy to make double chocolate brownie baked oatmeal is perfect for those days when you need a quick breakfast on the go or an anytime snack! So chocolately and yummy you’ll forget it’s healthy!

Double Chocolate Brownie Baked Oatmeal

Equipment

  • Large Mixing Bowl
  • Kitchen Spoon

Ingredients

  • 2 cups Rolled Oats I use sprouted organic oats
  • 2 cups Milk of choice I use almond/coconut milk
  • 1/2 cup maple syrup/honey I use maple syrup
  • 1/3 cup almond/peanut butter
  • 1/4 cup cacao/cocoa powder I use raw fermented cacao powder
  • 1 tsp vanilla extract
  • 1.5 tbsp flax meal I grind my own
  • 1.5 tbsp chia seeds You can grind this too
  • 1/3-1/2 cup chocolate chips I use Enjoy Life
  • Pinch of salt

Instructions

  • Measure out the oats and place them in a large mixing bowl. Measure out the milk and pour onto the oats and stir. I allow the oats the soak up some of the liquid while I measure out the rest of the ingredients.
    Add everything else to the bowl and stir to combine completely.
  • Place oatmeal mixture into a buttered 8×8 pan. Smooth out the top and place in a 350* oven for 45 minutes.
  • Use a cake tester or tooth pick to make sure the middle is cooked through. Remove the pan from the oven and allow to cool completely before cutting.
    Enjoy!

Notes

I like to store this in the fridge and grab a slice whenever I am in a hurry or need a little chocolate!  This can be frozen too; I allow to cool completely, slice into 9 pieces and wrap individually in parchment then plastic wrap.  I then place the wrapped slices in a freezer bag or container and they are ready to go!
To defrost, I remove from freezer and allow to thaw in the fridge or place in the microwave for 30 second increments until desired warmth.
