Quick & Easy Homemade Nachos Your Family Will Love
This recipe was born out of our love for Mexican/Latin food but wanting to stay home and not go out or get carry out. The recipe is simple to follow and the ingredients are all things easily found in your local grocery store.
One of the best aspects of this meal is that you can totally customize it to fit your family’s likes/dislikes and add whatever you would like, it’s so versatile!
Quick & Easy Homemade Nachos Your Family Will Love Ingredients
I use 2 bags of chips, any kind will do; hint of lime, white corn, yellow corn, blue corn, salsa verde, etc. In this recipe I used grass fed beef, it would be just as delicious with sauteed or marinate/grilled chicken as well. I usually stick with around a pound of burger but you can scale this up or down, as with all of the ingredients in the recipe. Cheese choices are unless and you don’t have to stick to just one! Go rogue and use several of your favorites!
Green onions add an extra crunch and a fresh taste. We sprinkle in pickled peppers or jalapenos for an added layer of flavor. For toppings we use sour cream, olives, more green onions, pickled peppers, lettuce, seferal salsas, more cheese! You really can take this recipe shell and make any combination of meats, chips and cheeses to create a unique dish all your own!
1lb hamburger, 1 large onion chopped, 2 bags of tortilla chips, 1-4oz can green chilis, 1 bunch green onions, 1 package taco seasoning (or your own homemade seasoning), 1lb or more of shredded cheeses, sour cream, salsa, cilantro, olives, lettuce, tomatoes, pickled peppers, etc.
The Recipe
Preheat your oven to 350* F (you know your oven best, my oven runs hot, so I use a moderate temperature as the pan will only be in the oven a short time).
You will need a large deep pan, such as the one I use in my video here:
You can also use 2 cookie sheet pans, whatever you have that will work for stacking the chips so that you can make a couple of layers deep.
The Process
Place your hamburger in a large preheat skillet and cook until no longer pink. If your meat is particularly lean, you may need to add some fat for browning. While the hamburger is cooking, chop one onion into small dice size pieces. Add this to the hamburget in the pan.
While the hamburger and onion sautee, shred your cheeses (if using block cheese). Next, chop the green onions, the pickled peppers and anything else that you would like to add to your nachos.
Once the meat mixture is cooked through, turn the heat off and add a 4oz can of green chilis and stir. Next add a package of your favorite taco seasoning or add your own homemade blend and mix until combined. Add enough water to bring the whole mixture together.
Get your pan and place a layer of tortilla chips on the bottom. Evenly “sprinkle” the meat mixture over the top of the chips. Next spread a layer of cheese and here is where you can take creative license and use as much or as little as you like! Then add whatever additions you would like in the layers; green onions, cilantro, pickled peppers, olives or anything.
Keep repeating the layers until you have used all of the meat mixture.
Place the pan in the preheated oven until cheese is golden and bubbly, usually abour 5-7 minutes.
Take the pan out of the heat carefully as the pan and the nachos will be very hot.
Serve with all of your favorite toppings like sour cream, salsa, black olives and enjoy!
This recipe is simple to follow and can be made even faster if you bulk cook the meat and store it in the freezer in 1 pound packages, then just pull out and thaw!
Leftovers, if there are any, will last stored in the refrigerator for a few days. Reheating these in the microwave will soften them, so you won’t get the same crunch as the first time.
