1/4cupcacao/cocoa powderI use raw fermented cacao powder
1tsp vanilla extract
1.5tbspflax mealI grind my own
1.5tbsp chia seedsYou can grind this too
1/3-1/2cupchocolate chipsI use Enjoy Life
Pinch of salt
Instructions
Measure out the oats and place them in a large mixing bowl. Measure out the milk and pour onto the oats and stir. I allow the oats the soak up some of the liquid while I measure out the rest of the ingredients. Add everything else to the bowl and stir to combine completely.
Place oatmeal mixture into a buttered 8x8 pan. Smooth out the top and place in a 350* oven for 45 minutes.
Use a cake tester or tooth pick to make sure the middle is cooked through. Remove the pan from the oven and allow to cool completely before cutting.Enjoy!
Notes
I like to store this in the fridge and grab a slice whenever I am in a hurry or need a little chocolate! This can be frozen too; I allow to cool completely, slice into 9 pieces and wrap individually in parchment then plastic wrap. I then place the wrapped slices in a freezer bag or container and they are ready to go!To defrost, I remove from freezer and allow to thaw in the fridge or place in the microwave for 30 second increments until desired warmth.I hope that you enjoy this recipe just as much a I am my family have!
