You can probably Google “low carb pizza” and find more than a thousand different recipes and variations to make. The basic recipe for this pizza is literally just 5 ingredients, that’s it! After that, you can take creative license and make it your own by adding different toppings, changing up the sauce or the cheeses, the options are numerous.
Why make a low carb pizza
Crustless pizza is definitely low carb and Keto friendly, especially when the sauce is no sugar added, and meat choices are low carb as well. Many of us are watching our carb intake, in hope of lowering our risks of type 2 diabetes and heart disease, but we don’t need to sacrifice for our health goals.
This low carb pizza is made without a crust and the first time I made it I couldn’t believe how much my family loved it. The crust was the hardest part to get over, but the rest of the pizza makes up in flavor for the lack of the bread component.
What you will need

Pictured are a seasoning mix, though you can use just about any seasoning that you like and prefer. Cream cheese or Neufchatel work just fine, I use stewed tomatoes but any tomato product would work either prepared or fresh. The eggs came from our backyard flock of egg laying hens and the cheese I use vary depending on what I have on hand at the time I am making the pizza. I typically keep either Parmesan or Asiago as well as Mozzarella as kitchen staples.
Make the base

In a stand mixer (or by hand if you are feeling particularly strong), place the room temperature block of cream cheese, the grated Asiago and the 2 eggs. Mix on low until well combined and there are no lumps. Once the mixture is smooth, add in your seasonings, salt and pepper to taste.
After mixing, add the pizza base to a prepared 9×13 pan. I prepared my pan with butter, you can use a cooking spray, coconut oil or avocado oil as well.
Bake the “crust” in a 350*/375* oven until slightly golden brown on top. You will smell the wonderful aroma coming from your oven! (Oven temperatures vary, you know your oven best, so adjust the temperature accordingly). This may take 10-15min depending on the temperature of your oven.

Once the base is done and it has achieved the desired browness, the fun part can start! This is where you can create whatever you want with whatever you have to use!
I place the “sauce” down first, for this version it was the stewed tomatoes that I briefly ran in the NutriBullet to make saucier.
After pouring the sauce on to the pizza base, you can start to add all of your other toppings. I went with straight shredded cheese. I spread the Colby Jack cheese across the top of the pizza along with a little shake of Parmesan for good measure.

The pizza goes back in to the oven for another 5-10min to melt the cheeses and to heat all of the toppings.

Serve the pizza as a stand alone, with a side salad or a vegetable; all of the choices are yours!
