These muffins are NOT just for breakfast! Very little prep involved; you can make these and have a quick grab meal-on-the-go anytime!

Savory ~ Sweet Breakfast Muffins

These muffins are savory, cheesy and sweet all in one! Make them on the weekend for a week of fast grab-n-go breakfasts!

Ingredients

  • 1/2-1 lb of breakfast sausage
  • 2 c of baking mix
  • 1-1 1/2 c of milk
  • 1 +c of grated cheese of choice
  • 1/4 c maple syrup
  • 2 fresh eggs beaten
  • 1/2 tsp Umami seasoning
  • 1 tsp onion powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • salt/pepper to taste

Instructions

  • In a large bowl, combine baking mix, salt/pepper, onion powder, Umami seasoning, cheese.
  • Add cooked breakfast sausage to the bowl and stir
  • Add beaten eggs, milk and maple syrup
  • Mix just until combined
  • Add baking powder and baking soda
  • Stir and immediately add to muffin tins
  • (Optional: drizzle tops with additional maple syrup)
  • Bake 12-15min
  • Let stand for 5min then remove to tray to completely cool

Notes

~ You can sub out pancake mix for the baking mix. You will need to adjust the baking powder as well.
~ Use any meats/cheese you like! Take this and make it your own!
~ Bump up the protein by using protein mix! You could also use cottage cheese, though adjust your milk as the cottage cheese will require less liquid added.
