What is the Tasiest Cookie to Make for a Holiday Treat

This cookie is sometimes referred to as Mexican Wedding Cookies or Russian Tea Cakes. We have always called them walnut snowballs or pecan puffs reflective of which nuts we have used in the cookie.

The ingredients list is fairly simple, using mostly items from your pantry that most of us have as staples. These include; butter, flour, powdered sugar, vanilla salt, and pecans or walnuts. That’s it!

What you’ll need to make the tastiest cookie holiday treat

1c of softened butter, 1/2c powdered sugar (for the batter), 2 1/4c flour, 1/2tsp salt, 1tsp vanilla, 1c chopped nuts (of your choice)

You will also need an additional 1c of powdered sugar to roll the cookies in after baking

The Process

Preheat your oven to 350*

Line 2 cookie sheets with parchment paper or silicone baking mats

Gather all of your ingredients

Here’s a video on making these cookies: https://youtu.be/Henw9UCIC14

The Recipe

Cream together the softened butter and 1/2c powdered sugar in the bowl of a stand mixer. In a separate bowl, mix together the flour and salt. Chop the nuts either in a food processor or by hand. Slowly, alternate adding the dry ingredients and the chopped nuts to the butter and sugar, making sure everything is well combined.

Shape the dough into 1~1.5″ round balls and place on the prepared cookie sheets.

Bake the cookies for 12~15 minutes, watching the cookies do not get too brown, just slightly golden.

Remove the pans from the oven and carefully roll each cookie in the reserved 1c powdered sugar using a fork. You must be gentle, as these cookies are delicate.

Place the sugar coated cookies on a cooling wrack and allow them to cool completely.

The cookies may be rolled in additional powdered sugar just before serving.

If you have leftovers, which would be hard to fathom, store in an airtight container in a cool dry place.

These tasty little treats go well with a cup of hot chocolate, coffee, tea or a tall glass of milk.

Enjoy!
